TPW Comforting and Savory Chili Recipe
Chili is sacred. Everyone has a different recipe, preference and opinion. I personally like my chili thick, mild in spice and hearty with multiple types of beans and red meat over chicken or turkey. If this aligns with your chili criteria, I invite you to try my recipe!
Best served with a GF corn bread because DUH! Other honorable mentions for chili accoutrements; avocado, sour cream, green onions, and a baked potato, I don’t make the rules okay.
TPW Chili Ingredients
I package of ground beef or turkey
1 celery bunch
4 large carrots
1 medium onion
1-2 gloves of garlic, pressed or chopped finely
1 ear of corn
1 can kidney beans
1 can pinto beans
1 can diced tomatoes
2 cups of broth (veggie or chicken, either work)
1/4 cup tomato sauce (I use Rao’s)
Salt and pepper to taste
2 TBSP chili powder (make it 3 if you want some kick)
1 and 1/2 tsp cumin
1/2 tsp paprika (and a few dashes of smoked paprika if you have)
1 tsp dried oregano
few dashes of chili flakes
Instructions for Instant Pot Cooking
Lightly brown meat, set aside
Sauté onion, celery, carrot for a few minutes until fragrant, then add garlic
Add spices
Add broth, tomatoes, both cans of beans, tomato sauce
Do 1 quick mix and then top the mixture with the corn (leave on top)
Seal and pressure cook on manual for 8 minutes
